Black Bean, Corn, and Cilantro Salsa

It’s Summertime!!

So that means cook-outs . . . and chips . . . and salsa! However, even though I can my own salsa (and other people really like it), I am not a huge salsa fan. It’s okay–and I use it in all my recipes that call for salsa. But it’s not my favorite food.

A couple of years ago, I went to a friend’s house that had a corn and bean salsa, and I loved it! I think it’s because I love black beans. Which is so weird, because as a child, I would have hated this kind of salsa. And now I love it. It can also go as a salad the way I make it as I don’t put in hot peppers in it. I’m not a super-spicy person. (Okay, I’m a very mild spicy person!)101_7481-1

So we just had a cook-out, and I made this salsa. There was some leftover, which made my husband and I happy! We consumed it for lunch the next day. I have looked at many recipes, and there are so many variations. So feel free to tweak the recipe and add more of the ingredients you like and less of the ingredients you don’t like! I have used Heather’s Cilantro, Black Bean, and Corn Salsa on as my base recipe, and then I have made it my own. Each time I make it, I change it a little bit as sometimes I don’t have all the ingredients on hand.101_7484-1

Here’s how I made it last weekend:

  • One 16 ounce bag of frozen corn. (Cook and drain it–I got mine from Aldi.)


    1 bag of corn, cooked and drained

  • 2 cans of black beans

    2 cans of black beans

    2 (15 ounce) cans black beans, drained and rinsed

  • 3 roma tomatoes, deseeded and chopped
  • 1 bunch finely chopped cilantro
  • 1/3 of a large red onion, finely chopped
  • 1 red bell pepper, seeded and chopped
  • 1 tablespoon minced garlic
  • 1/4 cup lime juice –I think I used the juice of 3 limes. I started with 2, but then added another–do it to your taste!
  • 2 tablespoons olive oil, or to taste
  • Salt to taste (I used kosher salt–but whatever you have on hand is good.)

Lightly mix all ingredients and refrigerate until you are ready to serve. This could be served as a salad or as a salsa with tortilla chips.

(You could add 5 green onions, finely sliced, but I didn’t have any. Also, you could add any of the yellow or orange sweet peppers. If you wanted more kick, you could add a jalapeno pepper.)
